Vinification

The vinification takes place in stainless steel fermentation tanks.

The grapes are fully destemmed and crushed. The juice is gently pumped over the skins during fermentation.

Under temperature controlled conditions the fermentation is long and even ensuring good aromatic and poliphenolic extraction.
